Burritos ‘Mexican Fiesta’
This is one of my all-time favourite meals! It’s a crowd-pleaser for all ages, as everyone can pick and choose their fillings.

Method
Prepare the chilli and guacamole
Preheat the oven to 190°C fan bake for warming the tortillas later. Prepare the black bean chilli. While it simmers, make Jo’s guacamole and place it in the fridge to chill.
Prepare the fillings. Finely dice the cucumber, tomatoes and capsicum and place each in a separate bowl. Grate the cheese and thinly slice the iceberg lettuce, then place them in their own bowls. Spoon the sour cream or crème fraîche into a small bowl and stir a few times to loosen it. Cut the limes into wedges.
Once the black bean chilli is cooked, transfer it to a serving bowl. About 10 minutes before serving, take the guacamole out of the fridge.
Warm the tortillas. Divide the tortillas into 2 piles and wrap each pile in foil. Warm in the oven for 8 minutes. Meanwhile, arrange the bowls of fillings with serving spoons, Black Bean Chilli, Guacamole and lime wedges on the table, along with the optional hot sauce, if using.
Serve. Remove the tortilla bundles from the oven and place them on a plate. For a little extra presentation, remove the foil and wrap the tortillas in a clean tea towel to keep them warm. Let everyone choose their fillings and assemble their own burritos. Enjoy!
