Jo's guacamole
One of my oldest recipes. It's not a traditional guacamole, but people love it.

Method
Very finely dice the garlic. Dice the tomato and set aside.
Quarter and peel the avocados and roughly chop into a bowl. Mash with a fork, add the garlic and continue mashing.
Add the strained lemon juice and salt. Mix and mash together until it forms a smooth paste.
Add a dash of Tabasco sauce and stir through.
Add the chopped tomato and mix in. Taste and add more salt or lemon juice if needed.
Cover and refrigerate for half an hour to allow the flavours to develop.
Garnish with a pinch of smoked paprika before serving.
