A plate with a fillet of grilled white fish with cherry tomatoes and capers

Method

  1. Allow the fish to come to room temperature. Take it out of the fridge at least 20 minutes before cooking.

  2. Preheat the grill to 220°C.

  3. Dice the cherry tomatoes. Add to a bowl with the capers, caper brine, and a drizzle of olive oil. Stir to combine.

  4. Place the fillets on a metal baking tray. Spoon the tomato and caper mixture evenly over the fillets. Place under the grill and cook for 8 minutes.

  5. Garnish with A scattering of Basil Dill leaves.

Tips from my kitchen

If the fish is at room temperature before going in the oven it allows the proteins to cook evenly.
